Had this for breakfast this morning. The recipe is after the break.

Low Carb Mcgriddles

Prep Time 10 minutes
Cook Time 30 minutes
Servings 9 Sandwiches

Ingredients

Pancakes

  • 4 eggs
  • 1 cup almond meal/flour
  • 8 ounces cream cheese
  • 1/2 Tablespoon vanilla extract
  • 1 Tablespoon Butter
  • 1 teaspoon cinnamon
  • 1 tablespoon maple extract
  • I also added 1 tsp of Ez-sweets liquid sucralose because I was wanted them to have the same lightly sweet flavor as the pancakes used in mcgriddles. If you're using another sweetener just guess really. Mostly it's trial and error

Sausage

  • 1 pound of ground breakfast sausage

Eggs

  • 9 Eggs
  • 9 slices cheddar cheese

Instructions

  1. Put eggs, cream cheese, vanilla extract, maple extract, and sweetener in a blender or magic bullet. Blend until smooth.
  2. Add almond flour. Blend again until smooth.
  3. Let rest for 2 minutes so the bubbles can settle.
  4. Pour small amount of the batter (I use silicone Egg/Pancake rings) into a hot pan greased with butter, pam spray or coconut oil.
  5. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter.
  6. Fry up 1 lb of ground breakfast sausage into patties. (I use the egg rings to actually make scrambled eggs the same size as the pancakes. The amount of eggs will vary depending on how many sandwiches you're making.)
  7. Scramble 1 egg and pour into silicon egg ring fry until done.
  8. Lay Down 1 pancake, layer with egg patty, sausage patty and 1 slice of cheese.
