2 medium zucchini (about 1 pound total)
olive oil
1/2 a cup of Parmesan Cheese
1 tbsp Garlic Powder
Shredded Mozzarella Cheese

For The Sauce

1 clove garlic, mashed and minced
1 teaspoon salt
1 can (6 ounces) tomato paste
1 can (8 ounces) tomato sauce
1/8 teaspoon pepper
1/2 teaspoon oregano
1 tablespoon olive oil

Preheat over to 400° F
Make the sauce by combining all the ingredients. You can save whatever you don't use for later. (I like to make low carb tortilla pizzas sometimes) Then set aside.

Slice the zucchini into 1/4 inch slices.
Pour a bit of olive oil into a bowl
in separate bowl combine Parmesan cheese and garlic powder
Dredge each zucchini slice in olive oil then then the Parmesan mixture then place on cookie sheet.
Top each slice with a bit of pizza sauce and then Mozzarella.
Bake for 10-15 minutes or until cheese is melted and bubbly.
